Introduction:
Modern
Art, Architecture and Design are not normally quoted as the “creative
sources” of a chef’s work but that is where Parson’s
School of Design, New York and French Culinary Institute trained
Tom Wolfe differs.
Tom now runs Blue Food from his base in London, providing a unique
take on event catering.
His delicious, imaginative and innovative food and it’s presentation,
is strongly influenced by his passion for 20th Century Art and Design,
especially Russian Avant Garde and Bauhaus.
His bold use of form and colour and his unique range of personally
designed serving trays create compositions echoing the likes of
Kandinsky and Malevich.
He approaches each assignment as an opportunity to create a stimulating
experience of tastes and visions. |

The Food:
His food is simple, “Flavours are not manipulated” and
as he expains, “I have reversed the process in a way, as many
chefs over complicate their recipes and serve canapés in a
formal and dull way.
Instead, I maintain the integrity of simple recipes but I present
them in a way that is literally “A Feast for the Eyes”.
This modern twist on traditional canapés includes,a geometric
pyramid of Raspberry Vanilla Panna Cotta, Blue Curacao and Coconut
Rum Jellies and Blinis with Sour Cream and Tobiko Caviar.
One of his most spectacular creations is
“Pierre et Gilles” inspired Silver Thorn Bush, produced
in collaboration with jewellery designer, Dani Tarcinale.
Organic silver branches made to bear divinely decadent chocolate dipped
strawberries rise elegantly from a contemporary silver base.

Clients:
Tom has been commissioned to cook for many celebrities and leading
companies, especially in the field of Fashion, Film and Music. 20th
Century Fox have used him for over 40 major Film Premieres.
Other clients include Steve Lillywhite, Sara Jessica Parker and Jude
Law.
Stella McCartney commissioned organic Mexican Food to mark the opening
of her new London boutique.
